It’s the season for summer celebrations! From Memorial Day to Labor Day, it’s one grand celebration after another. And between you and me, I’d rather be enjoying the party rather than managing the food – don’t you agree?!
Well, that’s where this summer slaw recipe comes in so handy! This strawberry orange dressing can be made in literally 5 minutes and the slaw is a breeze too!
Here’s what you’ll need ::
- fresh orange zest medium orange; pith removed, sectioned & chopped
- fresh chives, chopped
- olive oil
- champagne vinegar
- chopped fresh strawberries
- strawberry jam
- sea salt
- black pepper (optional)
The ‘slaw’ portion of this recipe is basic – allowing the dressing to be the real star. Give the purple and green cabbage a fine, rough chop. Or — for a real time saver, just buy a bag of coleslaw mix in the produce section.
Right before service, combine the dressing and the cabbage — giving everything a toss to evenly coat, top with almonds and serve. If you combine everything too early, the slaw can get soggy.
This Strawberry Orange Slaw is perfect for the summer – not only is it a simple and speedy recipe, it’s also safe to serve at room temperature (- or even at a warm outdoor picnic, thanks to the absence of mayonnaise).
This summer side dish is so colorful and flavorful! The combination of orange and strawberry is so classic but still a surprising twist on traditional slaw. And that little crunch from the slivered almonds adds the crave-worthy ‘something extra’! The perfect addition to your Memorial Day BBQ picnic!
Strawberry Orange Summer Slaw
Ingredients
Slaw Dressing
- 1 T fresh orange zest
- 1/2 medium orange pith removed, sectioned and chopped
- 2 T fresh chives chopped
- 6 oz olive oil
- 4 oz champagne vinegar
- 1/2 c chopped fresh strawberries
- 1/3 c strawberry jam
- 1 t sea salt
- 1/2 t black pepper optional
Slaw
- 3 c green cabbage finely chopped
- 2 c purple cabbage finely chopped
- 1/2 c sliced almonds optional
Instructions

In a medium mixing bowl, combine slaw dressing ingredients. Stir to evenly incorporate all ingredients.

Add finely chopped cabbage to a large serving bowl.

To serve immediately, pour dressing over chopped cabbage and toss to evenly coat. Top with sliced almonds and serve.

If serving later, do not combine. Cover dressing and slaw and refrigerate up to 3 days. Combine and toss to serve.
